The research will involve the developing and application of nose-space sampling techniques coupled to PTR-QUAD-MS and PTR-ToF-MS for in-vivo nose-space analysis. Investigation of the effect of different matrixes and oral protocols on the release of volatile compounds in model and real food systems.
